My husband and I orderded food from the Community Food Co-op of Utah last month and we recieved pork chops, ground beef, chicken, eggplant, cabbage, lentils, bread, pears, apples, carrots, onions, and avocados all for $23 dollars, which my coworker worked out to be about half the price you would pay in the grocery store. Pretty awesome. Anyway... I had never cooked with lentils before and decided I had better try since I have about 3 cups of lentils. I was looking at recipes and found a simple recipe and another more complicated recipe with ingredients not commonly used in our house. I didn't want to buy these ingredients needed that I never use so I decided to play with two recipes to make one... and it actually worked fabulously! My husband and dad really liked this hearty soup and I thought it was pretty tasty and healthy too. So here it is:

1 T olive oil
2 cloves garlic, minced
1 lg onion, chopped (I used a yellow onion)
1/2 t ground, dried rosemary
1 lb steak (ground beef would work fine too) cut into small cubes
1 qt tomatoes w/juice
2 cups beef broth (or 2 cups water with beef base added)
1/2 lb yams, diced
2 celery stalks, sliced
1 cup lentils (we used brown lentils, any variety should be fine too)
3/4 t ground sage
1 t ground black pepper

2 cups beef broth or water (as needed)

Saute the garlic and onions until onions are tender. Add steak and rosemary. Saute steak in onion mixture until steak is almost done. Add the remaining ingredients and bring to a boil, simmer for 20 minutes. The lentils will soak up much of the juices; add beef broth or water if desired for consistency. Heat thoroughly again if needed.  Yield: about 6 to 8 servings. Add salt and pepper to taste.

2 cups Sugar 
1/2 cup margarine  / or butter
1/2 cup milk 
1/4 cup Cocoa 
1 tsp Vanilla (or more) 
3 cups "Quick" Oatmeal 
1/2 cup Peanut Butter (or more :])
Slowly bring the sugar, butter, milk, and cocoa to a boil. (you want the sugar to dissolve) Once to a boil over medium heat ... boil for 3 three minutes. Stir Stir Stir!

Take off the heat and add vanilla, then oatmeal, and then peanut butter. (Add ingredient in that order) 

Stir together mixture, and place spoonfuls on wax paper. Allow to cool or enjoy them lava hot. 

haha... my sister calls them PMS wrangers

Now for the breakfast variety. Anyone who knows me would say I enjoy a good breakfast. This is something that I can't believe took my 26 years to do. And it all started with a strong desire not to do anymore dishes. We had one clean pot and a fork.



I took two strips of thick cut peppered bacon, folding them in half and placed them in our 1 qt pot. The great thing about this is the bacon cooks by being deep fried in its own grease.
When the bacon is done (you will want the bacon crispy, not chewy)

DO NOT drain the grease! Remember we are trying to limit the number of dirty dishes. So when the bacon is good and crispy, drop two eggs into the grease (on top of the bacon).
Now comes the tricky part, flipping. Flip in any way that works best for you. Its okay if things fall apart, just make sure your eggs don't get scrambled.

While the egg is cooking, take a flour tortilla (I used whole wheat here) and moisten one side with a little water and nuke for 10 seconds. The water will keep the tortilla most and soft so it won't tear.

When the eggs are done, place your choice of cheese (I highly recommend a 50/50 mixture of cheddar and pepper jack) onto the center of the tortilla and place the bacon/egg combination on top of the cheese.

DO NOT drain the grease! just place the pot back on the burner.

Now fold the tortilla around the eggs. and place folded end down, back into your pan. It is important to fry the folded end first so it doesn't unravel.

Let sit for a minute of two and flip. Fry for a few more minutes and then enjoy.

The Destroyer, I call it this because by the time your done, you've destroyed any good a Boca burger would normally do.

2 Boca burgers
6 strips of bacon (three for each patty)
2 slices of ham (seared in bacon grease)
1 fried egg (again in bacon grease)
sautéed onions (you got it, in bacon grease)
and 2 slices of cheese melted over each patty
-try placing the bacon on the patty then the cheese on top of the bacon for more stability-
veggies -totally optional (remember the veggies are in the patty!-
salt
pepper
and sauces


The triple by-pass

same as above but replace Boca burgers with 1/2 lb or greater beef patties

Chicken Chili. This was a recipe that i just kind of made up. and what do you know, it was good.

2 or 3 cans chicken breast
2 cans Great Northern Beans (drained but not rinsed)
1/2 onion
2/3 tsp crushed garlic (or one clove chopped)
1 can cream of chicken
1 can diced tomatoes with lime juice and cilantro
1 cup celery
1 can corn
pepper
salt
1-2 Tbls olive oil
1 cup red or green bell peppers

I marinated the steak in a McCormick Baja Citrus with a half a pack of garlic peppercorn, 4 tbls vinegar, and oil.
Then cook to taste on the grill.

The shrimp (pre-cooked salad shrimp) was 'fried' in a mixture of Tony's original and blackening seasoning, with lemon juice and extra olive oil.
